This is a quick and easy meal that has become a family favorite for a light but fulfilling dish any time of day.
Ingredients
- Salad Filling: 3 cups chopped romaine lettuce, 1 1/2 cups chopped cooked chicken (grilled, fried, or rotisserie), 1/3 cup Caesar dressing, 1/3 cup freshly grated Parmesan cheese, 1/2 cup homemade croutons, kosher salt to taste, freshly ground black pepper to taste
- Wraps: 4 flour tortillas or wraps (10-inch)
Instructions
- Step 1:
- In a large bowl, combine romaine lettuce, chicken, Caesar dressing, Parmesan cheese, and croutons. Toss well with tongs to coat evenly. Season with salt and pepper to taste. Add more dressing if desired. Set aside.
- Step 2:
- Warm the tortillas in a large skillet over medium heat for 15 30 seconds per side until pliable. Alternatively, microwave the tortillas between paper towels for 15 30 seconds. Keep warm under a kitchen towel.
- Step 3:
- Lay the warmed tortillas on a clean surface. Divide the salad mixture evenly among the tortillas placing it in the center.
- Step 4:
- Fold in the sides of each tortilla then roll up tightly burrito style. Secure with a toothpick if needed.
- Step 5:
- Serve whole or cut in half.
